Image---> mode-----> greyscale for black and white
not sure on the other i usually just play with the colors until i get it right ( adobe Photo shop 7)

i'd have given u the answer, but i personally took a 2 month course in school to learn about shit like that, something like that is EXTREMELY SIMPLE if you screw around in PS

Play with the color balance, brightnes, levels etc to get sepia, I don't have the exact numbers.

Command-U (or ctrl-U on a PC) to bring up the Hue & Saturation controls.  Removing all saturation will make an image greyscale.  Clicking on "Colorize" will allow you to change the entire tint/hue of the image for quick sepia tones, etc.

And for those of you who are quick to point someone to a vague place for tutorials and then act condescending because you took a 2-month course on it, give the guy a fucking break, sheesh.

I have 6 years of training in it, am part of NAPP, and am an Adobe Developer, and I can take enough time out to explain anything that anyone needs in photoshop without being an ass...
