That is pretty much how you get through any encounter.
Hold block/parry/defend the entire fight, and counter every single attack. When you get a knock down rather than a kill, either switch to hidden blade and kill them in 1 go, or just slash them a few times with your sword. The enemies get stronger, but your sword also does more damage later in so it ends up about the same.

In saying that, the Robert de Sable fight (I think it was that one) with the 20 guys (10ish of which were templars) then Robert straight after, was pretty tough.
