Give Colin Mcrae DiRT a try, It's a fun game (the racing itself is actually enjoyable, unlike NFS games where you play for the rewards) and it looks nice.

Bioshock is a good single player game. Although I enjoyed playing it I didn't think it was as good as other people said.

I know you said you don't want RPGs, but if you were to try oblivion with some mods.. well, there's nothing like it. You're in the middle of a forest the likes of which you've never seen in other games. In the distance, you can see some mountains. And then it hits you: you can go there. They're miles away, yet you can just drop by. It's a world in itself, and simply exploring that world can keep you busy for a long time. While many people have criticized it for its flaws, oblivion is the first game to go so far towards creating an actual second reality. It is the first step towards pure win. *drifts off thinking about TES6*
