I've ordered Flight sim 04, as it can run on my ancient non-gaming computer, but I was wondering if Flight Sim X could Run on my Laptop with:

1.6 Core2 Duo processor.
1GB RAM
256MB ATi Mobility Radeon X1400

not on the highest settings.

Download SP1 and SP2 for FSX though it helps a ton. Seriously.

I can now run it on all ultra high 1600 x 1200 anti aliasing pumped up.  You couldn't get that on a laptop... but you could probably run it decently.

Vista 64 bit
E6600
4 GB ram
8800 GTS 512

I'm thinking about getting the accelerator pack with the F-18 and P 51s, does anyone have it?

Probably not by much, if at all. I think FSX is better, though, because it actually has objective based flying.

FSX is nice and all...

...but I want to see a return of Space Simulator. So much more new material to work with.

It depends! I recently installed a new 747 plugin, night time and rain on my E6400 / 2GB / X1900XT 512MB and was getting an average of 11fps. (outside view) However, if I were to do the same with a Cessna I'd be getting a heck of a lot higher FPSs..s.

I think I'll have to make do with 04 for now but I'll probably get X after my upgrade in the summer.
