Not necessarily in order:
Halo/Halo2- Yeah, Goldeneye was good. Perfect Dark was better, but console FPS never really broke through until Halo. Halo sold systems. Try to think of any other console game of that generation. As lame as Microsoft is, they really couldn't have done any better of a job than purchasing Bungie to bring Halo to the XBox for it's launch. No other game, IMO, could have done what Halo did for XBox at that time.
Battlefield- Played a bit of 1942 at LANs, but never got hooked. BF2 though... despite the half-ass support it receives and all of the bugs we've been through with this game, it's still fun as hell. The Battlefield series brought about large scale FPS warfare.
Red Faction- Destroyable terrain? Yes plz. Where the fuck has this feature gone? Seriously, it's not that hard so why has it been missing from practically every single FPS to ever come out after RF?
Deus Ex- Another great idea. FPS-RPG. Interesting story mixed with quality gameplay. Sadly, this one type of game has virtually disappeared as well. I bought the sequel for XBox, but the framerates were just too horrible at certain spots to keep me playing.
Unreal Tournament, Medal of Honor:AA- Solid multiplayer games, especially at LANs.
