I've lately been cooking up rice then dicing a chicken breast, chuck that into a freezer bag (not snap lock) and chucking in some Moroccan spice mix. Shake and move the pieces around in the bag (with one hand holding the end closed by twisting it and looping the twisted end around a finger or two) then once covered empty contents into a heated frying pan with a few sprays of oil (I use coconut) and slowly fry on low-ish heat till cooked.
Once chicken is cooked you can add the rice in and stir at high heat till warm. Put into a large bowl and add a couple squeezes of lemon juice to taste.
