I don't get why people would
a) make the game easier by not sleeping
b) make the game easier by reducing the difficulty level
If you take good note of leveling as optimal as possible (I do have to add that on a PC with the right mod this is way easier because you don't need to write it down / remember it) the game isn't at all difficult and the NPCs aren't at the same level as your character after ... level 10 - 15. When your character is completely maxed out, you'll start looking for ways to make the game more difficult rather than easy (hence mods for more realistic animal behavior, like hunting in packs, yet again this only for the pc version)
So the only good tip is to make sure to advance in your minor skills in good relation to your major skills so you can optimally increase your experience levels with the maximal amount of bonus.
If you'd like more info on apt leveling, wrestle yourself through this:

In the end all initial differences are gone at higher levels (which I personally dislike about Oblivion, your initial choice doesn't really determine much in the flow of the game)
