I've really fucking spoiled myself. I used to love shit like taco bell or chili's and the other chain places. Now that I taught myself how to cook I can't eat any of it. Even the idea of eating kraft mac and cheese makes me gag. I'd almost say ignorance is bliss.


And this isn't a brag post. I'm not some 4 star chef or anything. But it's amazing when you know what food is supposed to taste like with fresh ingredients etc.

My point was only that I didn't know what good food really was until I started cooking for myself. I would've happily eaten Taco Bell every week because I thought it was good. I had it for lunch yesterday and all I could think was 'ugh'.

I was at an authentic sit down mexican restaurant in Tennessee last year.  Mexican owned.  Servers and cooks were Mexican.  Line to get a table.  Packed full of white Tennessee folks.  My co-workers were raving about the food.  Coming from eating SoCal Mexican food, the food was meh.  Nothing against what you've experienced, but FEOS is correct.  You need to be closer to the source to experience real Tex-Mex.  But then again, that's not even real Mexican food.  You need to go to Acapulco, or at least Ensenada, to know real Mexican food.

Not really... Each state in Mexico has it's own variation of food. There really is no 'Mexican food', just regional stuff.

What I meant was the degree of quality and authenticity.  You can't really gauge quality unless you've compared it to the source.   Same as Chinese food.  For example, most of the Chinese food that middle-America has tasted has been Americanised.  A Chinese restaurant in Virginia or Tennessee is not the same as a Chinese restaurant in San Francisco.

As for real Mexican food, yeah, regional.  My bad.

I don't really like chain restaurants (like, actually sit down and order) types, but I still have a place in my heart for that nuclear-orange-dubiously-food Kraft Mac n Cheese. I know it's nothing like real deal, but dear god, I've had many a happy memory as a elementary school kid coming home and eating that stuff. And I'm a sucker for McDonald's fries. Guess it's further reinforced by the fact that I never got to eat any fast food as a kid unless I did well in school.

Fast food seems to taste better when drunk though. Del Taco/Taco Bell. yum.
