What happens is that the manufacturer will produce the parts themselves for a number of years (or via contract), even after the car is no longer being sold. Eventually the contracts will be terminated but then often the plans/molds for those parts will be sold if there is a market for them. You see this with sellers like Year One that offer pretty much every conceivable part that would be necessary during the restoration of an old car. DeLorean also sold all of their old stuff and there's a company that is running as the DeLorean Motor Company in Texas that bought everything from DMC when they went under and still produces the car on an order-by-order basis (or at least they did last I heard) and also restores cars. Only for a very rare and old car do you have to worry about finding parts, but if there is a market for those parts, there is always a source - it just depends on what the cost is going to be.
